I have always considered myself to be a really good planner, organizer, really focused person but apparently I was kidding myself! I haven’t been very good at all lately with juggling all the things that life has thrown at me and sadly, this sweet little blog of mine has suffered the most. I know it’s the holidays (which honestly should be a time where I am sharing the most with you guys) and everyone is busy. I’ve also been traveling a good bit as well. It’s been a crazy busy couple of months but wow how I miss being here in this space. So, to celebrate the holiday season and my long lost return to blogland I’m sharing this fun and easy Pecan Pie Tart with Praline Cream that I made a couple weeks ago when I was actually IN my kitchen for a day.
Here in the South we love our pecan pies. We love pie in general so pecan pies are the epitome of Southern desserts. This recipe is close to the traditional pecan pie (although in tart form) but there’s a layer a cream cheese inside that’s a fun little surprise. This Peach Blackberry Tart is my favorite of all time!
Normally I don’t cook with corn syrup if I can help it but I don’t think you can make a pecan pie without it. But don’t worry…there’s not much at all. Also, feel free to use a packaged pie crust if you’re in a pinch. I was and I did and no one could even tell the difference. Not sure what that says about my homemade pie crusts but I choose to believe the store bought variety is just THAT good.
To garnish or dunk even, I whipped up a super easy praline cream that was perfect. It requires praline liqueur but that’s pretty simple to find. I also drizzled with melted chocolate just to make it a little different.
