Spiked Frozen Coffee Cooler

It’s SO hot!  I mean I know there are lots of other places in the U.S. and across the world that have much higher temperatures but it seems unusually warm and humid in the south to be so early?  Right?  I’m not complaining.  I like warm weather.  I don’t think I’d enjoy living in an area where there isn’t a definite round of seasons and Summer is one of my favorites.  I am also a fairly big coffee addict so this time of year I switch to iced coffee most of the time.  I don’t normally take the time and effort to make it fancy like this but it wasn’t really that much to do and it was so worth it!  This Spiked Frozen Coffee Cooler is a perfect pick me up all wrapped in a frothy treat.

There are so many options here.  I like making things that can be easily tweaked or as I like to call it customized.  I enjoy being able to adjust recipes so that they fit my life and tastes and family.  I used a little caramel Bailey’s Irish Cream and a dash of Frangelico Hazelnut Liqueur but you could use anything you like (Kahlua to give it a stronger coffee flavor maybe?) or nothing at all.  It would be wonderful with out the spike.  Either way, just make it!  You won’t be sorry.

If you’re a more than once a day coffee drinker, just make a few extra cups in the morning and stick them in the fridge for your fun afternoon treat.  I made my coffee for this extra strong since I like the flavor and it is getting diluted a little.  I do like any coffee I drink to be super strong…like crawling out of the cup strong.  There’s nothing more gross (well maybe some things but we won’t go into them here 😀 ) than weak coffee.  Blegh!!!  Anyway, this makes about 4 or 5 cups but would be easily cut in half.

  • 3 cups ice
  • 2 cups strongly brewed coffee, chilled
  • 1/3 cup sugar
  • 1/3 cup Bailey's Caramel Irish Cream
  • 1/3 cup Frangelico Hazelnut Liqueur
  • 1/4 teaspoon cinnamon
  • 1/2 cup heavy cream
  • Whipped cream for garnish and sprinkled cinnamon


  1. In a blender, process ice, coffee, sugar, Bailey's and Frangelico and cinnamon until smooth.
  2. Pour mixture into a serving pitcher (or individual mugs).
  3. Stir in cream and garnish.

    • Those are cups I got at a local home store although I’m sure I’ve seen them somewhere else before. I’ll think and email you if I remember where (assuming it’s a national chain) or if I find them another place. They are cute, huh?

  2. I just found your cold brewed iced coffee concentrate and fell in Love…I just used 1cup Folgers French Roast to 8cups water. Added a flavored creamer and Yum Yum!!! Would have enjoyed this on those Hot Summer mornings–but theres always next Summer. Thanks so much for the receipt..Love it.

    • That sounds good but it must not be very concentrated? Have you tried a concentrate? That’s why I love this so much because I can use half a cup or just a tiny bit depending on my mood. Try doing a bigger batch (a pound of coffee with 10 cups of water) next summer when it is hot and see how you like it? Come back and let me know? 🙂 Thanks so very much for stopping by!!
