Strawberry Spinach Salad

It’s taken me a really long time to come around to spinach. I spent years of my life thinking I hated it. I used to eat it OCCASIONALLY which really means rarely but it would be boiled with balsamic vinegar and buttered. It was fine that way and I mostly ate it for the health benefits although I was probably losing most of them in the boiling process. Several years ago I worked for a big telecom company. I was on the phone one day helping a customer who had an issue with his business installation and it turned out to be the night they were having their “friends and family” event. That’s where they test their kitchen and wait staff out on invited guests and serve anything on the menu complimentary. Since I was able to fix his problem, yay me, he sent me an invitation for two to the event. It was a very nice restaurant. At this restaurant I ordered (among many, many other things) the Strawberry Spinach Salad. It was incredible! My mom even said it was like having dessert first. Now, I make it for my family probably once a week and this time I AM getting the health benefits to the fullest because the spinach is raw and unaltered. That’s a win/win in my book. It’s super simple and even the kids will ask for it again. Plus it can even be fancy enough for company. I promise, people will be impressed!
The ingredients are easy to pick up at the grocery and it only takes minutes to assemble.
Here’s the printable:
- Fresh baby spinach, stems removed (handful for each serving)
- 3 strawberries per serving
- 1 tablespoon (or more) blue cheese crumbles
- 1 tablespoon (or more) praline pecans
- bottled balsamic dressing of your choice (I use Honey Balsamic)
Pile a handful of spinach per serving onto a pretty plate. Slice strawberries and arrange over the spinach. Sprinkle with blue cheese and nuts. Drizzle with dressing and serve. So super simple!
